The relationship between extraction efficiency, selectivity, and structure of ILs was studied and elucidated. Ionic liquids containing aromatic rings such as the N,N0 -dialkylimidazolium and N-alkylpyridinium are found to selectively extract and enrich n-3 polyunsaturated compounds.
