Kepner and Webb have suggested that a simplified version of the technique they used (which gave semiquantitative data) would be entirely adequate for establishing the fact that a given grape is of the Pinot type. The procedure would be some thing like this. Grape skins are re moved, washed, and then ground in a mortar with washed sand and a small volume of methanol containing 2 % hydrochloric acid. A small quantity of clear extract is then applied to a sheet of chromatographic paper and the chromatogram is de veloped by the ascending technique using η-butyl alcohol-acetic acidwater as a solvent. Comparison with a permanent standard should then be sufficient to establish whether the sample is Pinot Noir or not. Chromatography of the skin pig ments might also permit distinction between wines made entirely from Pinot Noir grapes and those in which the Pinot Noir has been blended with another variety. Not much Pinot Noir is grown in California, but there is a substantial market at good prices for Pinot Noir wines. As the regula tions require only that a wine must be made from 5 1 % of a grape variety to be labeled with a varietal name, there is considerable incentive to extend the amount of Pinot Noir wine by blending.
