Response to Comment on New Mathematical Model for Interpreting pH-Stat Digestion Profiles: Impact of Lipid Droplet Characteristics on in Vitro Digestibility

e thank Sebastien Gaucel and his coauthors for identifying an error in our original manuscript that attempted to develop a new mathematical model to interpret the free fatty acid release profiles measured in automatic titration (pH-Stat) experiments during lipid digestion (Li and McClements1). As the authors point out, there was a mistake in one of the exponents in eq 7 in the original manuscript, which led to an error in the final expression developed to model the time dependence of the fraction of free fatty acids released during lipid digestion (eq 12). The authors have corrected this error and shown how it causes some difference in the predicted digestion profiles. We encourage researchers working with the pH stat method to utilize the new model developed by Gaucel et al. to interpret their results. Utilization of this model provides valuable information about the rate constant for lipid digestion, which can be compared between different research groups.
