Indeed the water is of no importance and may be left o u t of the ordinary commercial analysis. From the sugar as given by the aacqharimeter, the sugar tester deducts 5 times the weight of the ashes. The result is the rendernent. If the sugar should be found to be 92 p. c. and the ashes 2.50, the reizdement would be 92 -(8.5 x 5 ) = 79 p. o. It is on thiq number, 79, that the sale of beet sugar is based in all European markets, which is a fact of itself more chstraordinary to me than the process.
