Of the major food classes, there are chapters on Fat and Fat Products; Carbohydrates—Sugar and Sugar Prod­ ucts; Cereals; Milk and Milk Prod­ ucts; Meat and Meat Products. The discussion on fat and fat products is ex­ cellent and, by far, the best and most up-to-date. The other chapters arc es­ sentially stock treatments as given by others earlier. Other chapters cover Food Laws and Standards; sampling and proximate analysis; Food Contamination, Deteri­ oration and Preservation; Food Colors; and Food Flavors. Flavors are pri­ marily equated to the natural spices and vanilla. There is almost no indica­ tion of the great impact that gas chro­ matography has had in the flavor field. There is a serious error in the data given for the heat inactivation of a botulinum toxin. Although the cita­ tion of 30 seconds to 5 minutes at 176° F. may be adequate for Type A strain, 30 minutes may be required at this temperature for the toxins of other botulinum strains. While this text is suitable for a course on food composition and analy­ sis, one must question whether there is a need for a new text which does not significantly update those already in print.
